Beetroot Tatars

The Beetroot Tatar from Spoonsparrow is perfect as a vegetarian starter.

Ingredients

  • 600 g beetroot (4 roots)
  • 1 Shallot
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • 2 tbsp lemon juice
  • Salt
  • Pepper (freshly ground)
  • 1 purple chicory
  • 4 slices whole‑grain rye bread with sunflower seeds (50 g each)
  • 2 sprigs dill
  • 2 sprigs lemon balm
  • 200 g cream cheese (45% fat in the tub)
  • 1 Organic lemon

Instructions

    Peel the beetroot roots, cut into strips and grate them. Peel the shallot and finely dice it. Mix the beetroot with mustard, honey, and lemon juice, then season with salt and pepper.

    Clean and wash the chicory, separating the leaves. Toast the bread slices and cut them in half. Wash and dry the dill and lemon balm, trim the stems and remove the leaves.
