Ingredients
- 3 cooked beets
- 2 Apples
- 1 small white onion
- 2 small pickles
- 8 sprat fillets
- 1 tbsp Sunflower oil
- Salt
- 1 tbsp Apple cider vinegar
- 1 tsp sugar
- 200 g Sour Cream
- pepper (ground)
- dill sprigs (for garnish)

Peel and dice the beets (best with disposable gloves, as the red color is hard to remove from hands). Wash the apples, quarter them, core, and cut into cubes. Peel and finely chop the onion.

Drain the pickles and slice thinly. Pat the sprat fillets dry and cut into bite-sized pieces. Mix the beets, onion, pickles, and apples with oil, salt, vinegar, sugar, and sour cream.

Let the mixture sit for about 20 minutes, then taste again. Gently fold in the herring pieces, plate on dishes, sprinkle with pepper, and garnish with dill sprigs before serving.
