Ingredients

  • 600 g beef
  • Pepper
  • 4 tbsp rapeseed oil
  • 250 ml red wine
  • 150 ml meat broth
  • 500 g Hokkaido pumpkin
  • 500 g yam root
  • 2 tbsp sauce thickener
  • Salt
  • Pepper
  • chili powder

    Cut the beef into cubes, season, sear quickly, deglaze with wine and broth, simmer for about 30 minutes.

    Peel the pumpkin and yam, remove seeds, cut into ~2 cm pieces. Add to the beef, simmer another 20-30 minutes, adding more broth if needed. When meat and vegetables are tender, stir in sauce thickener, season with salt, pepper, and chili powder, plate, and serve.
