Beef Stew with Mushrooms

Ingredients
- 1 kg beef stew meat
- Salt
- black pepper
- 3 cups red wine
- 1 cup water
- 1 small chopped onion
- 1 small chopped carrot
- 1 Garlic clove
- 2 Bay leaves
- 2 sprigs Rosemary
- 2 tsp chopped parsley
- 50 g butter
- 1 cup stock
- 0.8 kg mixed mushrooms
- 4 tbsp oil
- Salt
- Pepper

Season the beef with salt and pepper. Place all marinating ingredients in a pot, add the meat, cover and let sit at room temperature for about 8 hours, turning several times. Drain excess liquid and pat dry. Heat butter in a roasting pan, brown the meat, then add stock. Cover and bake at 180°C for ~40 minutes, pour in strained marinate, then roast uncovered for another 60 minutes. If needed, thicken with a slurry of cornstarch.

Clean the mushrooms and sauté them in butter in a non-stick pan. Add to the beef during the last 5 minutes. Slice the meat and serve on a plate with mushrooms and sauce.
