Beef Fillet with Pomegranate

Ingredients
- 1 Garlic clove
- 15 g ginger (1 piece)
- 3 tbsp Soy sauce
- 1 tsp liquid honey
- 5 tbsp olive oil
- 500 g beef fillet
- Pepper
- 200 g natural rice
- Salt
- 2 stalks Parsley
- 150 g tofu
- 1 Pomegranate

For the marination, peel and finely grate garlic and ginger. Mix with soy sauce, honey, and 3 tbsp oil. Rinse the meat, pat dry, remove skin, tendons, and fat, then coat with the mixture and refrigerate for about 2 hours.

Remove the meat from the marinade, pat dry. Heat 1 tbsp oil in a pan over high heat and sear the meat all sides until browned. Remove, season with pepper, and bake in a preheated oven at 160 °C (fan 140 °C; gas 1–2) for about 30 minutes.

Meanwhile cook rice in salted water according to package instructions. Wash and chop parsley.

Dice tofu into small cubes. Heat remaining oil in the pan. Fry tofu until golden brown on all sides. Add rice, stir in parsley, and season with 2 tbsp marinade.

Halve the pomegranate, remove seeds, and warm them with 2 tbsp marinade in a saucepan.

Take the meat out of the oven, let it rest briefly, then slice into thin strips. Arrange rice on four plates, top with sliced beef, and drizzle with sauce.
