Beef and Potato Stew

Ingredients

  • 600 g beef stew meat
  • 150 g onions
  • 2 bunches mirepoix (mixed root vegetables)
  • 2 tbsp lard
  • 1 tsp cumin
  • 1 tbsp dried thyme
  • 1 tbsp paprika powder
  • 1.5 L broth
  • 500 g carrots
  • 500 g Potatoes
  • 200 g frozen peas
  • 1 tbsp oil
  • 1 tbsp prepared horseradish

Instructions

    Wash the mirepoix and peel the onions. Dice both and brown them with the stew pieces in hot fat in a pot. Season the meat with salt, pepper, and sprinkle paprika.

    Pour in the broth, add cumin and thyme, and let everything simmer gently for about an hour. Peel the carrots and cut them into long pieces. Sauté the carrot pieces in 1 tbsp oil, season with salt and pepper.

    Peel the potatoes, cube them, and add them to the stew along with the carrots about 25 minutes before the end of cooking time. Add the peas about 8 minutes before the end. When everything is cooked, season with horseradish, salt, and pepper and serve.
