Bean Stew with Pork

Ingredients
- 250 g dried white beans
- 2 large onions
- 2 tbsp pork lard
- 500 g smoked belly meat
- 2.5 L broth
- 2 Tbsp paprika powder
- 1 tbsp Tomato Paste
- Salt
- black pepper (ground)
- 4 Carrots
- 1 stalk leeks
- 100 g celery (1 piece)
- 1 green bell pepper
- 1 red bell pepper
- 2 Bay leaves
Instructions

Soak the beans overnight. Rinse them in cold water and drain.

Dice the onion and sauté it until translucent in hot pork lard in a large pot.

Add the beans and belly meat, stir in tomato paste, pour in broth, add paprika powder, and bring to a gentle simmer over medium heat.

Meanwhile peel and dice the carrots.

Trim, wash, and slice the leeks into rings.

Peel, wash, and cube the celery.

Wash, halve, seed, remove white membranes from the bell peppers, and cube them.

Add all vegetables and bay leaves to the stew, stir well, and let it simmer on low heat for about 1 hour.

If needed, add a little water during cooking.

At the end of the cooking time, remove the belly meat, slice into rounds and strips, return it to the stew, season with salt and pepper, and serve.
