Batavia Fish Rolls

Fresh fish rolls made with crisp Batavia lettuce and zesty lime dressing.

Ingredients

  • 1 large head of Batavia lettuce
  • 400 g perch fillet
  • 1 tomato
  • 1 Shallot
  • 2 limes (juice)
  • 1 tbsp Olive Oil
  • 1 tbsp mustard
  • 1 bunch Basil
  • Salt
  • Pepper

Instructions

    Split the lettuce into leaves, rinse, and pat dry. Slice the fish diagonally into very thin strips. Wash the tomato, halve it, remove seeds, and dice finely. Peel the shallot and dice finely. For the dressing, whisk lime juice, olive oil, mustard, salt, pepper, and shallots together; pour over the fish slices and marinate for 5 minutes.

    Blanch the lettuce in boiling water for 5 minutes, then shock in cold water and pat dry. Remove basil leaves from stems. Roll one slice of fish and a basil leaf into each lettuce leaf. Arrange four rolls on a plate and garnish with tomato cubes and remaining basil.
