Barley Soup with Sausage Slices

Ingredients
- 120 g barley
- 200 g knackwurst
- 1 onion
- Plant oil
- 800 ml beef broth
- 1 bay leaf
- 3 peppercorns
- Salt
- 250 g waxy potatoes
- 2 carrots
- 0.5 stalk leeks
- pepper (ground)
- 2 sprigs parsley
- 1 stalk lovage

Rinse the barley under a sieve. Slice the sausage. Peel and finely chop the onion, then sauté it with the sausage slices in 1-2 tbsp hot oil in a pot. Remove the sausage slices and set aside. Add the barley, sauté briefly, then pour in the broth. Add bay leaf and peppercorns, season with salt, and simmer over medium heat for about 25 minutes.

Meanwhile peel, wash, and chop the potatoes and carrots. Slice the leeks lengthwise, rinse thoroughly, trim, and cut into thin rings.

Add the vegetables to the soup, season with salt and pepper, and cook for another 20 minutes. Rinse the parsley and lovage, shake dry, roughly chop the leaves, and add them with the sausage back to the soup. Taste and serve on plates.
