Ingredients
- 1 Red Onion
- 1 Garlic clove
- 200 g Cherry tomatoes
- 2 sprigs Basil
- 4 chicken breast fillets (pre-cooked, skinless, about 160 g each)
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- 1 tbsp liquid honey
- 3 tbsp balsamic vinegar
- 120 ml Poultry broth
Instructions

Peel the onion and garlic; slice the onion into wedges and finely chop the garlic. Wash, dry, and pat the tomatoes. Rinse the basil, shake dry, and pluck the leaves.

Wash and pat the chicken dry; make shallow slits in it. Thread with basil leaves, season with salt and pepper, and sear in a hot pan with oil until golden brown on all sides.

Add onion and garlic to the pan, sauté briefly, then add tomatoes, drizzle honey over them, and deglaze with balsamic vinegar. Pour in broth, reduce heat, and simmer gently for about 5 minutes, tasting as you go.

Plate the chicken breasts with the vegetables and drizzle with sauce before serving.
