Baked Turkey Drumsticks with Brussels Sprouts

Ingredients

  • 3 EL olive oil
  • 800 g potatoes
  • Salt
  • Pepper
  • 1000 g turkey lower leg (4 turkey drumsticks)
  • paprika powder (sweet)
  • 600 g Brussels sprouts
  • 4 Stalks Parsley

Instructions

    Grease a baking sheet with 1 EL olive oil. Peel, wash and pat dry the potatoes, cut them lengthwise into eighths. In a bowl mix the remaining olive oil with a little salt and pepper, add the potatoes and stir well.

    Rub the turkey drumsticks with salt, pepper and paprika to taste. Place the drumsticks on the sheet, bake in a preheated oven at 220 °C (fan 200 °C; gas: level 3–4) for 15 minutes. Flip, spread the potatoes on the sheet and reduce the temperature to 180 °C (fan 160 °C; gas: level 2–3). Continue baking the drumsticks with the potatoes for about 40 more minutes.

    Meanwhile clean the Brussels sprouts and make cross cuts at the stem ends. Boil in salted water for 10–15 minutes until firm. Drain, shock in cold water and let drain again.

    Add the Brussels sprouts to the sheet 5 minutes before the end of baking time, gently stir with the potatoes and finish cooking; the drumsticks are done when pierced at the thickest part with a fork and clear juices run out. Wash, dry shake and chop the parsley and sprinkle over the dish.
