Baked Swiss Chard Cheese Dumplings

Ingredients

  • 350 g fresh Swiss chard
  • 200 g alpine cheese
  • 3 eggs
  • 250 g flour
  • Salt
  • freshly ground pepper
  • nutmeg
  • flour (for the work surface and turning)
  • 350 ml heavy cream (at least 30% fat)

    Clean, wash, dry, trim hard stems, and chop Swiss chard leaves. Grate 150 g cheese and knead with eggs, chard, and flour. Season with salt, pepper, nutmeg, adding more flour if needed.

    Using two tablespoons, cut dumplings; toss them in flour on a floured surface and boil in salted water. When they float, lift with a slotted spoon and drain well.
