Baked Spinach-Feta Ravioli

Ingredients
- 300 g flour
- 1 tsp iodized salt
- 150 g cold butter (or margarine)
- 250 g quark
- 2 small onions
- 2 tbsp olive oil
- 50 g Pine nuts
- 300 g coarsely chopped frozen spinach (thawed)
- 1 Garlic clove
- 200 g Feta Cheese
- iodized salt
- black pepper
- Grated nutmeg
- flour (for rolling out)
- 1 egg (for brushing)
Instructions

Mix flour and salt in a bowl. Add butter or margarine and quark, knead into a smooth dough. Wrap in foil and chill for about 30 minutes.

Meanwhile, dice the onions. Heat olive oil in a pan, sauté onions and pine nuts for about 3 minutes, then add spinach and cook until all moisture evaporates.

Remove from heat. Squeeze garlic through a press, add to pan. Dice feta and stir into warm spinach. Season with salt, pepper, and nutmeg.

Preheat oven to 200°C (180°C fan). Roll out half the dough on a floured surface into a rectangle about 35 x 42 cm. Mark the center line of the long side without cutting. On one half, mark 15 squares roughly 7 cm each. Place a heaped teaspoon of filling in the center of each square.

Fold the other half over. Press dough between the piles, then cut into squares with a rolling pin. Pinch edges around with a fork. Place ravioli on a parchment-lined baking sheet.

Whisk egg and brush ravioli with it. Bake on the middle rack for about 15 minutes until golden brown.
