Ingredients
- 250 g spinach leaves
- 1 onion
- 2 tbsp olive oil
- 2 tbsp pumpkin seeds
- chili powder
- Salt
- freshly ground pepper
- 12 cannelloni tubes
- 200 ml heavy cream
- 200 ml vegetable broth (instant)
- 2 tbsp light roux (instant)
- 4 tbsp freshly grated Parmesan

Line a baking dish with oil and place the filled cannelloni inside. Bring cream and broth to a boil. Stir in roux and let it simmer once while stirring. Pour over the cannelloni and sprinkle Parmesan on top. Bake in preheated oven at 200°C (or 180°C fan) for about 30 minutes.
