Ingredients

  • 4 salmon fillets (about 160 g each)
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp watercress
  • 2 tbsp chopped chives
  • 2 tbsp chopped parsley
  • Lemon balm
  • 150 g crème fraîche

Instructions

    Place each salmon fillet on a piece of aluminum foil, drizzle with lemon juice and season with salt and pepper.

    Whisk the herbs with the crème fraîche, grated lemon zest, 1 tbsp lemon juice and a splash of water until smooth; season heavily with salt and pepper.

    Spread the herb cream over the salmon fillets, loosely seal the foil, and bake in a preheated oven at 180°C for about 20 minutes.
