Baked Salmon

Baked salmon from Spoonsparrow is quick to prepare and full of flavor.

Ingredients

  • 200 g Cherry tomatoes
  • 1 small red onion
  • 200 g broccoli
  • 2 Garlic cloves
  • 30 g Pecorino cheese
  • 2 tbsp green olives (pitted; about 15 g)
  • 2 tbsp mixed nuts (e.g., walnuts, cashews, almonds)
  • 100 ml oat cream
  • Salt
  • Pepper
  • 0.5 tsp Chili flakes
  • 2 salmon fillets
  • 2 tbsp olive oil
  • 1 handful basil leaves

Instructions

    Wash and halve the cherry tomatoes. Peel and slice the onion into strips. Wash the broccoli and cut into small florets. Peel and finely chop the garlic. Grate the Pecorino cheese coarsely.

    Place the vegetables in a baking dish. Distribute the olives and nuts over them. Mix in the oat cream and Pecorino, seasoning with salt, pepper, and chili flakes.

    Pat the salmon fillets dry, drizzle with olive oil, season with salt, and place on top of the vegetable mixture.

    Bake the salmon in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) for 15–20 minutes, until the salmon is tender and the vegetables are firm yet crisp.

    Meanwhile, wash the basil, shake off excess water, and pluck the leaves. Remove the baked salmon from the oven and sprinkle with fresh basil before serving.
