Baked Rice Balls with Shrimp

- 1 Lorbeerblatt
- 350 g Rundkornreis
- 50 g geriebener Parmesan
- 2 EL Butter
- 3 Eier
- 150 g Riesengarnele roh (küchenfertig geschält und entdarmt)
- 2 EL frisch gehacktes Koriandergrün
- Chiliflocken
- 4 EL Mehl
- 100 g Semmelbrösel
- Pflanzenöl (zum Frittieren)
Instructions

In a pot bring about 600 ml salted water with the bay leaf to a boil, add the rice and simmer on low heat while stirring frequently for about 20 minutes until it softens. Stir in the Parmesan, let cool slightly, then mix in the butter and one egg. Remove the bay leaf. Finely chop the shrimp, combine with the coriander, salt and chili flakes into the rice.

For breading, whisk the remaining eggs in a shallow dish. Scoop walnut-sized portions from the cooled rice and shape them into balls. Coat each ball in flour, dip in the egg wash, then coat with breadcrumbs.

Fry the balls portion-wise in hot oil for 3-4 minutes until golden brown. Drain on paper towels and serve.
