Ingredients
- 1 kg new medium potatoes
- 100 g Gruyère cheese
- 100 g low-fat quark
- 100 g green asparagus tips
- parsley (1 tbsp chopped each)
- chives (1 tbsp chopped each)
- Salt
- black pepper (freshly ground)

Wash the potatoes thoroughly, pat dry, and wrap individually in aluminum foil. Bake in a hot oven at 180°C for about 35 minutes, then remove and let cool to lukewarm. Cut off a lid and slightly flatten the bottom. Lightly hollow out the potatoes.

Blanch the asparagus tips in boiling salted water for 6 minutes, then shock them in cold water and drain.

Dice the Gruyère and mix with quark, potato flesh, herbs, salt, and pepper; finally fold in the asparagus tips. Fill the potatoes and gratinate under a hot oven grill for 2–3 minutes.
