Baked Potatoes with Avocado Cream

Ingredients

  • 4 Potatoes
  • butter (for the foil)
  • 2 ripe avocados
  • 1 lemon
  • 150 g Sour cream
  • Salt
  • Pepper (from the grinder)
  • Cayenne pepper
  • 4 tomatoes

Instructions

    Preheat the oven to 200°C.

    Wash the potatoes thoroughly and wrap each separately in greased aluminum foil. Place on a rack in the oven on the middle rack (gas level 3) and bake for about 1 hour.

    Meanwhile, cut the avocados lengthwise all around and loosen from the pit.

  4. 4.

    Cut the flesh of one half into small cubes. Drizzle with lemon juice, cover and set aside.

  5. 5.

    Blend the flesh of the remaining avocado half with 2 tbsp lemon juice and crème fraîche. Season with salt, pepper and cayenne pepper.

    Wash the tomatoes and cut into small cubes.

  7. 7.

    Unwrap the finished potatoes, slice them open on top and gently press apart.

    Add the avocado cream and sprinkle with avocado and tomato cubes.
