- 1 kg waxy potatoes
- 1 onion
- 2 Eggs
- Salt
- nutmeg
- butter (for the pan)

Preheat the oven to 180°C (350°F) with both top and bottom heat.

Peel the potatoes, grate them coarsely, and squeeze out excess moisture using a cloth. Catch the potato juice in a bowl and let the starch settle. Discard the liquid and add the settled starch back into the grated potatoes. Peel and finely dice the onion. Mix the eggs well with the potatoes and season generously with salt and nutmeg.

Grease a cast‑iron skillet with butter and pour in the potato mixture. Smooth the top and bake in the oven for 1.5 to 2 hours until golden brown and crispy.
