Ingredients

  • 1 kg mussels
  • 150 g frozen soup vegetables
  • Salt
  • 3 Garlic cloves
  • parsley
  • 100 g Soft Butter
  • 3 tbsp breadcrumbs
  • 50 g grated Parmesan
  • ground pepper

Instructions

    Clean mussels under running water. Bring 0.5 l water and soup vegetables to a boil in a large pot. Add mussels and 1 tsp salt, cover and cook over medium heat for about 10 minutes. Drain and let cool. Discard unopened mussels.

    Preheat oven to 225°C. Separate mussel meat from shells, return it to the shell halves, and place on a baking sheet.

    Peel garlic cloves and press through a press. Wash parsley, dry by shaking, pick off leaves, finely chop. Mix garlic, parsley, butter, breadcrumbs, and Parmesan; season with salt and pepper.

    Spread mixture over mussels and bake in upper rack of oven for 5-8 minutes until golden brown.
