Ingredients

  • 600 g lamb shoulder
  • 6 tbsp Olive oil
  • 2 cloves garlic
  • 1 handful thyme
  • 1 large eggplant
  • 2 Zucchini
  • 4 tomatoes
  • Salt
  • Pepper

Instructions

    Preheat the oven to 180°C fan.

    Wash and pat dry the meat. Cut into about 1 cm thick strips and place in a greased baking dish.

    Peel and finely chop the garlic. Rinse the thyme and roughly halve, then finely chop half of it. Wash the eggplant, zucchini, and tomatoes. Slice the eggplant lengthwise, and cut the zucchini and tomatoes into slices.

    Distribute the garlic and chopped thyme over the meat. Season with salt and pepper, then layer the tomatoes, eggplants, and zucchini alternately on top of the meat. Salt and pepper again generously. Drizzle with remaining oil and place thyme sprigs on top. Cover with foil and bake for about 1 hour. After ~40 minutes remove the foil and continue baking until done.
