Ingredients
- 800 g beef
- 2 tbsp flour
- 4 onions
- 200 g diced tomatoes (canned)
- 500 g carrots
- 4 tbsp oil
- 1 tbsp sweet paprika powder
- 1 tbsp hot paprika powder
- 1 tsp Caraway seeds
- 1 tbsp Tomato Paste
- 200 ml red wine (full-bodied)
- 500 ml meat broth
- Salt
- Cayenne pepper
- Parsley (chopped)
- lemon zest

Peel and dice the onion.

Cut the beef into bite-sized cubes, dust with a little flour, and sear in hot oil in a roasting pan until browned. Remove, sauté onions in the drippings, stir in tomato paste, then return the meat. Add wine and half the broth, spices, tomatoes, and bring to a boil.

Transfer to 200°C oven and bake for about 1½–2 hours.

Peel and cut carrots into pieces, add halfway through cooking, stir occasionally, and pour more broth if needed.

Season with salt and cayenne pepper, garnish with parsley and lemon zest, and serve.
