Baked Feta with Vegetables

Ingredients
- 3 yellow bell peppers
- 6 tomatoes
- 2 red onions
- 1 clove garlic
- 3 tbsp olive oil
- 1 tsp Dried oregano
- 3 tbsp white balsamic vinegar
- Salt
- black pepper (freshly ground)
- 100 ml Vegetable broth
- 1 sprig rosemary
- 3 stems thyme
- 400 g sheep cheese
- 120 g black olives (pitted)
Instructions

Preheat the oven to 200°C (Oven rack in middle).

Wash the bell peppers, halve them, remove skins and seeds, and cut flesh into large pieces. Wash tomatoes, trim stems, slice into wedges. Peel onions and garlic; slice onion thinly into rings, finely chop garlic.

Brush a baking dish with 1 tbsp oil.

Combine prepared vegetables with remaining oil, oregano, and balsamic vinegar. Season with salt and pepper, transfer to the baking dish. Pour in vegetable broth, sprinkle rosemary and thyme on top, bake for about 20 minutes, stirring once or twice during cooking.

Meanwhile, drain sheep cheese and cut into cubes. Drain olives well. Remove vegetables from oven, mix in olives and cheese, return to oven for another ~5 minutes just until heated through. Taste again before serving.
