- 2 scallions
- 1 red chili pepper
- 2 tbsp olive oil
- 800 g diced tomatoes (canned)
- Salt
- Pepper (freshly ground)
- 8 eggs
- 100 ml whipping cream
- 4 tbsp crème fraîche
- 200 g Feta Cheese
- cilantro leaves (for garnish)

Preheat the oven to 180°C fan.

Peel and finely chop the scallions. Wash, deseed, and finely chop the chili pepper. Sauté both in hot oil until translucent. Add the tomatoes and simmer gently for about 10 minutes, stirring occasionally. Season with salt and pepper, then divide into four shallow, oven-safe dishes. Carefully crack two eggs into each sauce. Whisk the cream with crème fraîche and drizzle over the eggs. Lightly season again. Sprinkle with crumbled feta and bake in the oven for 12-15 minutes. Serve garnished with cilantro.
