  • 150 g Baby spinach
  • Salt
  • Pepper
  • nutmeg
  • 4 eggs

    Wash, trim, and blanch the spinach in boiling salted water for 1 minute. Drain, let it drip, then squeeze out excess moisture.

    Preheat the oven to 180°C (350°F) with upper and lower heat. Cut four pieces of parchment paper (about 15x15 cm) and place them on a muffin tin. Season the spinach with salt, pepper, and nutmeg, and fill the cups. Crack an egg into each cup. Bake in the oven for about 15 minutes until the eggs are set. Remove from the parchment paper, optionally sprinkle more salt, and serve.
