Baked Beef Steak

Ingredients
- 1 Hüftsteak (ca. 750 g)
- Salz
- Pfeffer (aus der Mühle)
- 4 EL Rapsöl
- Rapsöl (für die Form)
- 200 g champignons
- 80 g Semmelbrösel
- 2 Eigelbe
- 1 EL gehackte Petersilie
- 1 EL gehacktes Majoran
- 1 TL Zitronensaft
- 0.5 TL Zitronenschale
- 150 ml schlagsahne
- 2 Möhren
- 150 g zucchini
- 200 g Brokkoli
- Salz

Preheat the oven to 160°C with upper and lower heat.

Wash and pat dry the Hüftsteak. Season all sides with salt and pepper. In a hot pan, brown the steak in 2 EL oil on all sides. Then place it in an oiled baking dish and bake for 30-45 minutes (depending on thickness).

Meanwhile clean and dice the mushrooms. Heat the remaining oil in a pan. Fry the mushrooms for about 5 minutes, stirring until liquid evaporates. Transfer to a bowl and mix with breadcrumbs, egg yolks, herbs, lemon juice and zest. Season with salt and pepper. Apply the mixture to the steak about 15 minutes before finishing baking and press it on.

Meanwhile peel the carrots and wash the zucchini. Slice both diagonally into ~1 cm thick slices. Wash broccoli and cut into small florets. Bring a pot of salted water to boil. Blanch carrots and broccoli for about 3 minutes, then add zucchini and cook another 2 minutes. Drain everything and keep warm.

Remove the meat from the dish and let it rest for about 5 minutes. Stir cream into the pan juices and dissolve them. Season sauce with salt and pepper.

Slice the meat and arrange on a plate with vegetables and sauce. Serve.
