Baguette Sandwich with Arugula, Tomatoes and Egg

Ingredients

  • 4 baguette rolls
  • 4 eggs
  • 2 tbsp heavy cream
  • Salt
  • Pepper (freshly ground)
  • butter (for frying)
  • 4 tomatoes
  • 100 g Arugula

Instructions

    Slice the baguette rolls horizontally. Beat the eggs with the cream and season with salt and pepper.

  2. 2.

    In a small pan, fry each omelette in slightly hot butter, then roll them up individually.

  3. 3.

    Wash the tomatoes, cut off the stems, and slice into rounds. Wash, trim, and dry the arugula.

  4. 4.

    Layer tomato slices, arugula, and an omelette roll inside each baguette half and serve immediately.
