Ingredients
- 2 Eggplants
- Salt
- 4 tbsp Tahini
- 1 tbsp Lemon Juice
- Pepper
- 2 Garlic cloves
Instructions

Wash, clean, halve the eggplants and sprinkle each half with a little salt. Let sit for a few minutes before patting dry with a kitchen towel.

Place the eggplants on a baking sheet lined with parchment paper and roast in a preheated oven at 220 °C (fan‑forced 200 °C; gas: level 3–4) for about 40 minutes.

Peel the roasted eggplants and garlic cloves, then blend them with the remaining ingredients in a stand mixer. Blend until creamy and season with salt and pepper.
