Avocado Fries
The Avocado-Fries from Spoonsparrow are a healthy twist on the popular fast‑food classic.
Ingredients
- 4 avocados
- Salt
- Pepper
- 3 tbsp Lemon juice
- 60 g spelt whole‑grain flour
- 3 eggs
- 100 g whole‑grain breadcrumbs
- 4 tbsp olive oil
- 1 chili pepper
- 2 stems basil
- 2 sprigs thyme
- 400 g yogurt (3.5% fat)
Instructions

Peel, halve and pit the avocados. Cut flesh into sticks, season with salt and pepper, drizzle with 2 tbsp lemon juice and coat in flour. Dip in whisked eggs and then bread crumbs. Arrange on a parchment‑lined tray, drizzle with 2 tbsp oil. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 15 minutes until golden brown.

Meanwhile halve the chili pepper lengthwise, deseed, rinse and chop. Wash basil and thyme, pat dry, pluck leaves, finely chop some herbs and mix with yogurt and 1 tbsp lemon juice. Season with salt.

Fill small bowls with yogurt and drizzle remaining oil over them. Plate avocado fries on dishes, serve dip beside. Sprinkle pepper, chili and garnish with leftover herbs.
