Ingredients

  • 2 Spring Onions
  • 3 ripe avocados
  • 2 tbsp lemon juice
  • 1 tbsp freshly chopped dill
  • 3 tbsp natural yogurt
  • 3 tbsp sour cream
  • 600 ml Vegetable Broth
  • Tabasco
  • Worcestershire sauce
  • 150 g smoked trout

    Wash and trim the spring onions, then slice into thin rings. Halve the avocado, remove the pit, and press the flesh out of the skin. Dice small, mix with lemon juice and dill, set aside 4 tbsp, and blend the rest with the spring onion rings in a blender.

    Add the yogurt and sour cream, stir, and gradually pour in the broth. Season with Tabasco and Worcestershire sauce, then serve in bowls. Tear the trout into pieces and arrange on top of the soup with the remaining avocado cubes. Serve immediately.
