Ingredients

  • 1 Avocado
  • 100 g cream cheese
  • 1 tsp horseradish (jarred)
  • 1 tbsp freshly chopped basil
  • 1 tsp lemon juice
  • salt to taste
  • 4 thick baguettes
  • 4 tbsp olive oil
  • 150 g chorizo
  • 1 tbsp chives rolls
  • chive sprigs

Instructions

    Peel the avocado, halve it, remove the pit and mash the flesh with a fork. Mix in the cream cheese, horseradish and basil, then season with lemon juice and salt.

    Place baguette slices in a hot pan with olive oil and fry until crisp and golden brown all around. Remove from the pan and drain on paper towels.

    Slice the chorizo diagonally into thin strips. Stack 3–4 pieces overlapping to form a roll, secure with a toothpick, and lightly brown in the hot pan with oil.

    Plate the avocado spread, top with toasted bread and chorizo rolls, and garnish with chives and sprigs before serving.
