Avocado Asparagus Salad

This avocado asparagus salad is healthy and delicious – perfect for lunch break!

Ingredients

  • 200 g green asparagus
  • 4 tbsp olive oil (60 ml)
  • 4 tbsp vegetable broth (60 ml)
  • 2 Garlic cloves
  • 2 Avocados
  • 2 tbsp white wine vinegar (30 ml)
  • Salt
  • Pepper
  • 1 bunch basil (10 g)
  • 200 g sheep cheese (9% fat)

Instructions

    Clean the asparagus, pat dry, trim woody ends and sauté in a pan with a little oil over medium heat for about 3 minutes. Deglaze with vegetable broth and cover to steam until al dente, about 5 minutes.

    Peel and finely chop the garlic. Add it to the asparagus and cook for 1 minute over medium heat. Remove from heat, add vinegar, salt, pepper and remaining olive oil, then let marinate for 25 minutes.

    Peel the avocados, remove pits and slice thinly. Arrange in a fan shape on plates, top with asparagus, sprinkle with crumbled sheep cheese, drizzle the seasoned sauce over it, garnish with basil leaves, and serve.
