Austrian-Style Meatballs with Potato Radish Salad

Ingredients

  • 2 old-fashioned rolls
  • 1 onion
  • 1 Garlic clove
  • 4 tbsp clarified butter
  • 800 g mixed ground meat
  • 2 Eggs
  • 1 tsp sharp mustard
  • 1 tbsp freshly chopped marjoram
  • Salt
  • Pepper (freshly ground)
  • breadcrumbs (for coating)

Instructions

    Soak the rolls in lukewarm water. Peel and finely dice the onion and garlic. Sauté in 1 tbsp hot clarified butter until translucent. Remove from heat and let cool. In a bowl combine the ground meat, eggs, mustard, and the onion mixture. Add the squeezed and crumbled roll and marjoram; knead well. Season with salt and pepper. Shape into eight patties and coat in breadcrumbs.

    Heat the remaining clarified butter in a large hot pan and brown the patties 1-2 minutes on each side. Reduce heat and cook for an additional 4-5 minutes until done.

    Drain on kitchen paper and serve with potato radish salad as desired.
