Ingredients
- 4 salmon steaks (about 180 g each)
- 3 tbsp Lemon juice
- Salt
- Pepper (freshly ground)
- 50 g Parma ham
- 50 g flour
- 2 tbsp olive oil
- 250 ml white wine
- lemon slices
Instructions

Wash the salmon, pat dry, drizzle with lemon juice and season with salt and pepper. Cut the ham into small cubes.

Place the flour on a plate, dredge each fish piece in it, tapping off excess. Heat the oil in a non‑stick pan and cook the salmon over medium heat for about 3 minutes per side, then remove and keep warm.

Sauté the ham cubes briefly in the remaining fat, deglaze with wine and reduce to two thirds over high heat, seasoning as needed.

Plate the salmon with the sauce and lemon wedges.
