Asparagus Tart with Goat Cheese

Ingredients
- 3 tbsp olive oil
- 300 g puff pastry
- 600 g green asparagus
- 200 g crème fraîche
- 2 Eggs
- 2 tbsp freshly grated Parmesan
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 150 g goat cheese (roll)
- fresh mint (for garnish)
Instructions

Preheat the oven to 180°C fan-forced. Brush a 24 cm tart tin with 1 tbsp oil.

Roll out the puff pastry and line the bottom of the tin.

Peel the lower third of the asparagus and trim the woody ends. Whisk together the crème fraîche, eggs, and goat cheese. Season with salt, pepper, and nutmeg, then spread onto the pastry base leaving a 1–2 cm border. Arrange the asparagus on top. Slice the goat cheese into thin rounds, distribute over the asparagus, season again, and drizzle with 2–3 tbsp olive oil.

Bake in the oven for about 40 minutes until golden brown. Remove, garnish with mint, and serve.
