Asparagus Tart

Ingredients

  • 350 g green asparagus (each stalk)
  • 350 g white asparagus (each stalk)
  • 1 organic orange (zest and juice)
  • 3 eggs
  • 200 g Sour Cream
  • 1 tsp basil pesto (from jar)
  • Salt
  • freshly ground pepper
  • nutmeg
  • 80 g grated Gouda cheese
  • 6 sheets filo or yufka dough (frozen)
  • 50 g liquid butter

Instructions

    Peel the lower third of the green asparagus, trim ends; peel and trim the white asparagus thoroughly. Blanch all stalks in plenty of boiling salted water for a short time, shock in ice water, then drain.

    Whisk together orange juice and zest, eggs, sour cream, and pesto; season with salt, pepper, and nutmeg.
