Asparagus Salmon Quiche

A perfect after-work recipe – quick to make, healthy and with fresh ingredients.

Ingredients

  • 200 g Flour
  • 0.5 tsp Salt
  • 1 tsp Baking powder
  • 1 egg yolk
  • 130 g cold butter
  • 1 bunch spring onions
  • 500 g Green Asparagus
  • 30 g Butter
  • 150 g Smoked salmon
  • 5 eggs
  • 250 g sour cream
  • Salt
  • ground pepper (from the mill)
  • nutmeg
  • 120 g Gouda cheese (sliced)
  • chopped chives (for garnish)

Instructions

    Mix flour with salt and baking powder, mound on the work surface, create a well in the center and add the egg yolk. Distribute cold butter pieces around the edges and quickly knead everything into dough using both hands. Wrap in cling film and chill for 30 minutes.

    Clean and cut spring onions into 5 cm pieces. Trim and wash asparagus, peel the lower third thinly, and cut into 5 cm pieces. Preheat oven to 180°C (convection). Sauté onions with asparagus in butter for 2-3 minutes. Cut salmon into bite-sized pieces.

    After chilling, roll dough on a lightly floured surface into a circle about 30 cm diameter, place in greased pan and press the edges. Whisk eggs with sour cream, season with salt, pepper and nutmeg. Spread half of the vegetables over the crust and pour the egg mixture over them.

    Distribute remaining vegetables, salmon pieces and Gouda slices on top. Bake in preheated oven for 35-45 minutes until golden brown. Remove, garnish with chives and serve hot.
