Ingredients
- 300 g puff pastry (frozen, 1 pack)
- 1 bundle green asparagus
- 1 egg yolk
- 100 ml heavy cream
- 100 g crème fraîche
- 200 g grated goat cheese
- Salt
- black pepper (freshly ground)
- ground nutmeg

Peel the lower third of the asparagus as desired, trim the ends, and blanch in simmering salted water for about 5 minutes until just tender. Remove, shock in ice water, then pat dry.

Whisk together cream, crème fraîche, egg yolk, and goat cheese. Season with salt, pepper, and nutmeg.

Let the puff pastry thaw, roll into a rectangle slightly wider than the asparagus. Place on an aluminum pan, forming a rim. Spread the cheese mixture over the pastry and arrange the asparagus spears parallel across it.

Bake immediately in a preheated oven at 250 °C (220 °C fan; gas: level 4 or 5) for about 15 minutes until golden brown. Remove the quiche from the oven and serve.
