Asparagus Pasta Salad with Ham

Ingredients

  • 2 Garlic cloves
  • 3 tbsp fruit vinegar
  • Salt
  • freshly ground pepper
  • a pinch of sugar
  • 1 tsp coarse mustard
  • 6 tbsp Olive oil
  • 500 g Green Asparagus
  • 200 g small pasta (e.g., cravats)
  • 1 bunch spring onions
  • 1 bunch Basil
  • 100 g Parma ham

Instructions

    For the dressing, peel and finely chop the garlic cloves; whisk with fruit vinegar, salt, pepper, a pinch of sugar, mustard, and olive oil.

    Trim the ends of the asparagus, rinse, and cut into about 5 cm pieces. Boil in salted water with a pinch of sugar for roughly 10 minutes.

    Clean and slice the spring onions; cook them with the asparagus during the last two minutes. Remove both from the cooking liquid and drain well.

    Cook the pasta in the asparagus water according to package instructions until al dente, then drain. Rinse basil leaves, shake dry, and tear into pieces. Combine all ingredients, pour the dressing over, and let the salad rest for about an hour.

    Serve the asparagus pasta salad topped with Parma ham and fresh basil leaves.
