Asparagus and Cheese Pizza

Ingredients
- 400 g green asparagus
- 200 g crème fraîche
- 1 egg
- Salt
- freshly ground pepper
- nutmeg
- 1 tbsp Lemon Juice
- 200 g Sahnegorgonzola
- butter (for the baking sheet)
- flour (for the work surface)
- 125 g low-fat quark
- 1 tsp salt
- 3 tbsp olive oil
- 1 egg
- 250 g flour
- 0.5 tsp Baking powder

Place quark, salt, olive oil, and egg in a mixing bowl and combine with the dough hooks of an electric hand mixer; add flour and baking powder and knead until a smooth dough forms. Cover and let rest for about 30 minutes.

Wash asparagus, peel the lower third, and trim the ends. Blanch the spears for about 3 minutes in boiling salted water, drain, shock in ice water, and dry well.

Whisk crème fraîche with egg; mash Gorgonzola as needed with a fork and stir into the crème fraîche mixture, seasoning with salt, pepper, nutmeg, and lemon juice.

Grease the baking sheet with butter. Roll out the dough on a floured work surface to a round, thin shape, place it on the sheet, and form a rim.

Spread the cheese mixture over the dough, arrange asparagus decoratively on top, pressing them slightly into the sauce. Bake in a preheated oven at 200°C (lower rack) for about 25–30 minutes.
