Ingredients

  • 200 g Mie Noodles
  • 50 g Peas (frozen)
  • Salt
  • 50 g Mung Bean Sprouts
  • 200 g red bell peppers (1 red bell pepper)
  • 0.5 TL Sichuan Pepper
  • 0.5 bunch Cilantro
  • 1 EL Sesame Oil
  • 3 Eggs
  • 2 EL light soy sauce
  • 2 EL roasted, salted peanuts

Instructions

  1. 1.

Cook the Mie noodles and peas in boiling salted water for about 3 minutes. Drain in a sieve (reserving 50 ml of cooking water) and drain well.

  2. 2.

Wash the sprouts and drain them well in a sieve.

  3. 3.

Halve, deseed, wash, and slice the bell pepper into thin strips.

  4. 4.

Roughly crush the Sichuan pepper in a mortar. Wash the cilantro, shake dry, pluck the leaves, and roughly chop them.

  5. 5.

Heat the oil in a non-stick pan (or wok), add the bell pepper and stir-fry for about 2 minutes over medium heat. Mix in the noodles, peas, and 50 ml of cooking water. Continue stir-frying until the liquid has evaporated.

  6. 6.

Whisk the eggs, soy sauce, and Sichuan pepper in a small bowl and pour over the noodles. Stir until set.

  7. 7.

Mix the cilantro and sprouts into the noodles. Serve on plates, sprinkle with peanuts, and serve.
