Asian Noodle Stir-Fry with Shrimp, Vegetables and Sesame

Ingredients

  • 400 g Udon noodles (Japanese flat noodles)
  • 400 g shrimp (peeled; deveined)
  • 200 g Broccoli florets
  • 1 red bell pepper
  • 200 g Sugar snap peas
  • 2 Spring Onions
  • 2 Garlic cloves
  • 1 chili pepper
  • 3 tbsp Sesame oil
  • 10 g sesame seeds (1 tbsp)
  • 4 tbsp fish sauce

Instructions

    Cook noodles according to package instructions, drain and set aside.

    Meanwhile rinse shrimp under cold water and pat dry. Wash broccoli florets and drain.

    Wash, trim and slice bell pepper into strips. Wash and trim sugar snap peas.

  4. 4.

    Wash, trim and cut spring onions into rings. Peel garlic and finely chop. Wash, trim and finely chop chili pepper.

    Heat oil in a pan. Sauté sugar snap peas, bell pepper, garlic, sesame seeds and chili over high heat for 2 minutes. Add remaining vegetables and cook while stirring for about 3–4 minutes.

    Add noodles and shrimp. Cook another 2–3 minutes until all ingredients are heated through but still have bite. Season with fish sauce.
