Asian Noodle Salad with Carrots, Coriander and Peanuts

Ingredients

  • 350 g Udon noodles
  • 2 carrots
  • 40 g peanut kernels
  • 1 red chili pepper
  • 1 Garlic clove
  • 1 cm ginger
  • 4 tbsp soy sauce
  • 1 tsp liquid honey
  • 4 tbsp rice wine
  • 2 stalks coriander leaves
  • 1 tbsp Sesame seeds

Instructions

    Cook the noodles according to package instructions, rinse with cold water and drain well.

    Peel the carrots and cut lengthwise into thin strips using a vegetable peeler. Chop the peanuts. Wash the chili pepper, halve it, deseed and slice into fine strips.

    For the dressing, peel and finely chop the garlic and ginger. Mix with soy sauce, honey and rice wine and season to taste.

    Rinse the coriander leaves, shake dry and strip them. Combine the sesame seeds and all prepared salad ingredients with the dressing, mix well and serve in bowls.
