Asia Duck Thighs

Ingredients
- 4 duck thighs (ca. 800 g)
- 80 g starch
- oil (for frying)
- 2 tbsp sesame oil
- 200 ml Chinese plum sauce (Asialaden)
- Salt
- pepper (ground)
- 2 tbsp Soy sauce

Halve the duck thighs at the joint and massage in the starch, then tap off excess. Heat about 3 cm of oil in a pan until very hot. Fry portions of the duck for 1 minute on each side, lower heat and cook another 5-7 minutes until crisp brown. Arrange pieces in a roasting dish and drizzle with sesame oil.

Whisk plum sauce with 250 ml water until smooth, season with salt and pepper, then pour evenly over the meat. Cover with a lid and roast in a preheated oven at 180°C for 1 hour. Flip the meat halfway through and spoon the pan juices over it.

Season finished thighs with salt, pepper and a splash of soy sauce, then serve immediately.
