Artichoke with Hollandaise

- 4 artichokes
- 1 lemon (juice)
- 250 g butter
- 125 ml dry white wine
- 1 EL white wine vinegar
- 3 egg yolks
- Lemon juice
- Salt

Wash and trim the artichokes (cut off hard leaf tips and, if necessary, remove the choke). Place them side by side in a wide pot and fill with water up to halfway; add lemon juice. Cover and cook over medium heat for about 30 minutes until the leaves can be easily pulled apart.

For the sauce melt the butter over medium heat. Add the wine and vinegar to a saucepan and reduce by half. Let cool slightly, then whisk the egg yolks in a metal bowl over a hot water bath until creamy (do not let it get too hot). Remove from heat and gradually stir in the melted butter in thin streams. Season with lemon juice and salt.
