Apricot Dumplings

Ingredients
- 1 kg cooked potatoes (from the day before)
- 75 g flour
- 75 g Semolina
- 1 egg
- Salt
- nutmeg
- 12 apricots
- 12 pieces cube sugar
- Salt
- 5 tbsp butter
- 100 g breadcrumbs
- sugar (for dusting)
- cinnamon (for dusting)
Instructions

Peel potatoes and press them through a potato ricer, then knead with flour, semolina, salt, nutmeg and egg into a smooth dough. With floured hands form a roll and cut it into 12 slices.

Wash apricots, halve them, pit them, and place a small piece of sugar in each apricot. Press an apricot into each dough piece and seal tightly with the dough.

Boil the dumplings in lightly salted simmering water for about 20 minutes until cooked through.

Melt butter in a pan, add breadcrumbs and toast under stirring until golden brown.

Remove the finished apricots dumplings with a slotted spoon, let them drain, then coat them in the buttery breadcrumb mixture. Arrange on a preheated plate, dust with cinnamon sugar, and serve with coffee.
