Apple Salad with Pumpkin and Avocado

A fresh fruit‑vegetable salad featuring crisp apples, roasted pumpkin cubes, creamy avocado slices, and a tangy yogurt‑soy dressing.

Ingredients

  • 1 apple
  • 3 tbsp Lemon juice
  • 100 g pickled pumpkin (jarred)
  • radicchio
  • 1 ripe Avocado
  • 2 tbsp sprouted pumpkin seeds (sprouted 3 days prior)
  • 4 tbsp Yogurt
  • 1 tbsp soy sauce
  • Salt
  • pepper (ground)

Instructions

    Peel the apple, quarter it, remove the core, slice into thin strips and immediately toss with 1 tbsp lemon juice. Drain the pickled pumpkin and dice into small cubes.

    Wash and dry the radicchio, tear into bite‑size pieces.

    Pit the avocado, halve it, cut the flesh lengthwise into slices and drizzle with remaining lemon juice.

    Rinse and drain the sprouted pumpkin seeds.

    Whisk the yogurt with 1 tbsp lemon juice and season with soy sauce, a pinch of salt and pepper.

    Arrange the salad components decoratively on plates and drizzle with the yogurt dressing.
