Ingredients
- 400 g raspberries (fresh or frozen)
- 8 sheets white gelatin
- 3 tsp peppermint tea
- 500 ml apple juice
- fruit sugar (to taste)
Instructions

Wash, rinse, and drain the fresh raspberries (thaw if frozen).

Soak gelatin in 10 minutes of cold water.

Boil the peppermint tea with apple juice, let steep for 5 minutes, then strain through a coffee filter and sweeten to taste.

Squeeze out excess liquid from gelatin and dissolve it in the hot tea. Add half of the raspberries to the tea. Pour the mixture into small molds and refrigerate for 3–4 hours until set.

To serve, briefly dip the molds in hot water and pour the jam onto two plates. Arrange the remaining berries on top and garnish with mint leaves.
