Apple Cauliflower Soup

Ingredients
- 300 g cauliflower
- 1 onion (chopped)
- 1 tart apple
- 1 tbsp Rapeseed Oil
- 0.5 tsp turmeric
- 400 ml Vegetable broth
- Salt
- black pepper (freshly ground)
- 1 tbsp Sunflower seeds
- 1 tbsp Crème fraîche
- 2 tbsp parsley

Wash, trim and cut the cauliflower into small florets, including the stem. Peel the apple, remove the core and dice it (reserve a quarter). Sauté cauliflower, apple and onion in hot oil, stir in turmeric, then deglaze with broth. Simmer gently for about 15 minutes.

Meanwhile, toast sunflower seeds in a dry pan until golden.

Puree the soup, fold in crème fraîche, season with salt and pepper. Slice the reserved apple quarter into thin strips.

Serve the soup garnished with apple strips, coarsely chopped parsley leaves, and toasted sunflower seeds.
